I always exercise caution when using salt in my dishes. I’ve discovered that I can enhance flavor by incorporating fresh basil, rosemary, and a hint of mint instead of relying on salt. One thing I always keep in mind when cooking for my residents is they need nutrient-dense food, which includes fruit, vegetables, and whole grains.
If a health-conscious resident asked me to suggest an entrée, I would recommend baked chicken breast with sautéed broccoli in olive oil and a garlic baked potato. Some items on my menu that focus on nutrition include brown rice and sweet potatoes. For residents needing to gain weight, I would suggest oatmeal, cream of wheat, and enhanced mashed potatoes.
I always consider my nutrition when dining out and stick with healthy meals. Healthy snacking is essential as well. A healthy snack option is cashews and pistachios. I love the flavor and the smell. My one guilty pleasure snack is jelly belly candy.
