Nostalgic Lunchbox Treats

Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.

Growing up, I preferred school-provided lunches because they had some of the best options. When I did pack my lunch, my favorite thing to find was a peanut butter and jelly sandwich with no crust. The strangest thing I ever found in my lunch was Brussels sprouts, which my mom sent as leftovers from the night before. Now, my kids usually pack their own lunches, which typically include a Lunchable, string cheese, and a juice box.

Balancing Nostalgia and Nutrition

If I could create one school lunch item from scratch, it would be the square pizza. The ultimate school lunch menu should feature lemon roasted potatoes, chicken and spinach, and grilled peanut butter and jelly.

My secret to making the ultimate lunchbox meal is a charcuterie board flatbread. Packing school lunches and meal prepping as adults are similar because both require prepping ahead to ensure you have everything you need. To ensure a well-balanced and nutritious meal, I include lots of fruits and vegetables, whole grains, and healthy proteins. Packing your lunch also gives you better control over portion sizes, helping you eat healthier.

I’d love to see oatmeal, a yogurt parfait, a sliced apple, and a boiled egg or mini waffles for a breakfast box.
